Sucralose is one kind of sugar substitute or artificial sweetener. Sucralose is 450–650 times sweeter than sucrose and has a pleasant sweet taste, twice as sweet as saccharin, and 3.3 times as sweet as aspartame. and sucralose’s quality and time–intensity profile are very close to that of sucrose. Unlike aspartame, the character is stable under heat and over a broad range of ph conditions, so it is application in baking or in products that require a longer shelf life.
