Phosphates


A phosphate salt is a chemical compound that comprises phosphate ions and their related anions. 

In food applications, phosphates serve as emulsifiers, thickeners, stabilizers, and leavening agents. Additionally, they act as preservatives by retaining moisture, inhibiting fat oxidation, and regulating pH levels, thereby extending shelf life and improving texture, flavor, and appearance. Phosphates are invariably employed in processed meats, dairy items like processed cheese, baked products, and soft beverages.

Phosphate can be also used in fertilizers, cosmetics, animal feed and electronics. 


Acidulants

Acidulants, which are chemical compounds incorporated into food and beverages, impart a tart, sour, or acidic taste and serve as preservatives. They function by reducing the pH level of a product, a process that also aids in other roles such as flavor modulation, acting as leavening agents, and preserving color and texture. Typical examples encompass citric acid, malic acid, acetic acid, and fumaric acid and their derivatives, which are frequently utilized across a wide range of products, from candies and drinks to baked items.

Preservatives

Preservatives, as a type of food additive, play a crucial role in extending the shelf life of food and enhancing its flavor. Specifically, they help to manage and inhibit food degradation, offering protection against spoilage caused by microorganisms such as bacteria, yeast, and molds, as well as against life-threatening botulism and other organisms that can lead to food poisoning (antimicrobial function). These preservatives include citric acid and its citrate salts, sorbic acid and potassium sorbate, benzoic acid and its benzoate salts, propionic acid and its propionate salts, ascorbic acid and its ascorbate salts etc.

Sweeteners

Sweeteners are incorporated in foods to reduce sugar content and calories, when you enjoying the delicious foods without the concern of gaining weight. They are frequently found in "sugar-free" or "diet" items  like soft drinks, desserts, and chewing gum. Apart from imparting sweetness, sweeteners can also serve as preservatives, enhance flavors, facilitate fermentation, and increase the volume of products like ice cream.

Commonly used sugar substitutes encompass aspartame, monk fruit extract, saccharin, sucralose, stevia, acesulfame potassium (ace-K), and cyclamate.

Flavourings
A flavoring (or flavouring), also known as flavor (or flavour) or flavorant, is a food additive that is used to improve the taste or smell of food. A flavoring is defined as a substance that gives another substance taste, altering the characteristics of the solute, causing it to become sweet, sour, tangy, etc.
Thickeners

A thickening agent, also known as a thickener, is a substance capable of enhancing the viscosity of a liquid while preserving its other properties largely unchanged. Edible thickeners are frequently employed to thicken sauces, soups, and puddings without affecting their flavor; thickeners also find application in paints, inks, explosives, and cosmetics. Common food thickeners encompass corn starch, potato starch, modified starches, xanthan gum, guar gum, gelatin, methylcellulose, carboxymethyl cellulose, and so forth.

Leavening agents

A leavening agent is a substance employed in baking to make doughs and batters rise, resulting in a porous and lighter texture. These agents emit gases such as carbon dioxide, air, or steam, which expand and generate bubbles. Common varieties encompass biological agents like yeast, as well as chemical agents such as baking soda and baking powder.
