Sodium Acetate is chemically designated CH3COONa, a hygroscopic powder very soluble in water. Sodium acetate anhydrous is white crystalline coarse powder or block. It’s odorless, tastes a bit of vinegary, used as food preservatives or acidity regulator.

Chemical Name: Sodium Acetate

Molecular Formula : C2H3NaO2

Molecular Weight:  82.03

CAS: 127-09-3

EC No. 204-823-8

E No.: E262

Relative density: 1.528

Melting point:  324℃

Applications in foods

Sodium acetate may be added to food as a seasoning, sometimes in the form of sodium diacetate, a one-to-one complex of sodium acetate and acetic acid, given the E-number E262.

It is often used to give potato chips a salt and vinegar flavour, and may be used as a substitute for vinegar itself on potato chips as it does not add moisture to the final product.

Sodium acetate (anhydrous) is widely used as a shelf-life extending agent and pH control agent.

It is safe to eat at low concentration.
