  Erythorbic acid  

 

Erythorbic acid (isoascorbic acid, D-araboascorbic acid), a stereoisomer of ascorbic acid with similar physicochemical properties, is widely used as an antioxidant in processed foods.

2. Character: white crystalline or powder, odourless, In the dry state it is reasonably stable in air, freely soluble in water; water solution easily oxidized by air; trace metal ions, heat and light can accelerate oxidation; relatively stable in dry state.
