Carrageenans or carrageenins are a family of natural linear sulfated polysaccharides. They are extracted from red edible seaweeds. Usually, Carrageenan shows off-white to snowy or tan to yellowish, it is free flowing powder, free of odor or taste. The gel is heat-reversible, it’s can dissolve after heat up and the solution can gel while cooling.

 

Carrageenans contain 15–40% ester-sulfate content, which makes them anionic polysaccharides. They can be mainly categorized into three classes based on their sulfate content. Kappa-carrageenan, iota-carrageenan, and lambda-carrageenan.

 

Carrageenans are widely used in the food industry, for their gelling, thickening, and stabilizing properties. Their main application is in dairy and meat products, due to their strong binding to food proteins.

 

Carrageenan is also applied in medicine, chemically industry, for daily supplies, biological chemistry, building paints, textile printing and agriculture.
