Sodium gluconate composed with many hydroxyl named five hydroxyl sodium acid, with formular  NaC6H11O7, molecular Weight:218.14. it is white or light yellow crystalline powder or granule, easy soluble in water, slightly soluble in ethanol and diethyl ether. Its E number is E576 as acidity regulator in food, It can be also used in textile, metal surface treatment, cement, and more.
